You can switch to slicks as the Kenda Kross. They are smooth in the center and still hold on to the sides when you walk into the grass and mud. You can also buy thin (1.5 inch) road tires that will work on the road and also the liter. I use the Kenda Kross and they are as good a coach.

You can certainly change to slick tires, I did that on some of my cycles, and one of my current bike has 26 inch wheels with road tires.
Change the wheels cause other problems, you should check the release framework, and if you have rim brakes, you'll need to bring to lime with larger diameter wheels.
Any change of tires will give you a huge advantage, but you can see that while the transmission is too low, and it will still not be as fast as the road bike.
