motorcycle wheels and tires act like gyros. The idea is to have the lightest gyro (tire from the wheel of the Assembly), so you have less unsprung weight for stock. the height of the tire directly affects the speed of the tower "in" the corner is. A oblects farthest point falls flat faster the smaller it is vertical. The largest tire more he wants basiccaly stand.

Low rotational mass = quicker handling.
Lower profile = more pronounced "taper" effect when bent = net handling.
Small wheel / tire = less unsprung weight = better traction on bumpy surfaces = more control.
