I want to know if I can still have your bike customized from a superbike engine using custom exhaust, as I want to build my own chopper ..

different engine configurations generate sounds different and unique. If you want the sound of a V-twin, then you'll need a V-Twin engine.

I think you must be someone very young. You must examine your own motivations, objectives, depth of commitment and degree of mechanical knowledge before embarking on this project.

It would be unrealistic to expect a superbike engine to make agriculture "potato potato" sound so often associated with Harley Davidson. It would be embarrassing. Superbike engines are designed for the 21st century, and are quite different.
