Hmmm ... I would go for polyester, but I do not really know why lol. I think it's just the thought of nylon that can be hot and sweaty in the form of clothing. I assume polyester could breathe easier, while maintaining what is more waterproof.

I am a touring bike and here the answer you can trust, while PVC and polyester suck. You'll be wetter than riding in them, without rainwear.
The only thing you can count on is really resistant GoreTex. It costs a lot of money, but also a rain jacket is sometimes what can really save my life long distance tours, it is really what I need. So my pants cost about $ 500, which would be quite ridiculous, so I bought it for cycling home-supermarket. My jacket cost more. meditate. for the city or short bike ride is totally not worth it? This jacket was not good at all to pay down massive, but if you're used to rain and you know you have a roof over your head at night is a very good thing to have.
