Why new bicycle helmets have this side "dig / mask" instead of a helmet-shaped first regularly? What are they?

If you want a different look, there are still many older models of helmets available in many bike shops in your local. Take a look.
They do it because it gives you more protection on the front. It is also like this because it's the new style
My old pal Uncle Neal is fairly close, but here is the total response.
The visor is 2 important things for the cyclist.
First, it diverts more air vents in the helmet to keep your head cooler, a cooler rider is able to run longer.
Second, it protects the riders eyes from the sun, thereby preventing fatigue. A rider is also less tired able to ride longer!
And they are designed to break with minimal force, if the problems they can cause in an accident are negligible at best, so 2 long sides and almost no down side seems to work!
As for your other question, unless the shield is molded into the helmet body, which is very rare, it comes off with some minor effort to use something like locks thumb screw device or a certain type.

In general, helmets with visors are more suited for mountain bikes, without sun is on the road.
But this is not an absolute rule.
I drive mostly highway and the use of a helmet visor for shade, I had a little scare with skin cancer so hard got the real message from my doctor in the shade my face.
If tower road, you may find the visor keeps your vision, especially if your bike is fit with a very aerodynamic (drop bars). Then the shadow or not you want a road (no visor or one you can delete) helmet.
If you drive a hybrid, flat bar road bike or simply take up any more than either will.
Just wear a helmet 8-)
The shield means that it is mainly for mountain biking. You can remove them if you hit the road.
I will respond with Jawa and add one more thing: the goggles. If you are about to come to a vine, tree branches, palm, etc., you can dip your head slightly forward to deflect the vegetation. Of course, this applies more to mountain bike road bike.
